(Recipe) Easy Cold Dipping Somen Noodles Using Hot Pot Soup Base


Before we knew it, it’s almost April, and we’ve skipped right over spring - we’re already seeing more days that feel like the height of summer. While it’s certainly nice to indulge in a hot pot on days like these, why not try a refreshing recipe that uses hot pot broth as a cold soup base? Somen noodles are thin and easy to eat, making this the perfect recipe to beat the heat.


Cold Dipping Somen Noodles

Ingredients (3-4 servings):

5.6 oz./160 g of ground pork

1/4 head of cabbage (8.8 oz./250 g)

1 lb./450 g of grape tomatoes

1 small yellow bell pepper (5.3 oz./150 g)

1 bunch of chives (3.5 oz./100 g)

1 pack of shimeji mushrooms (3.5 oz./100 g)

3.5 oz./100 g of bean sprouts

3 bundles of dried somen noodles

1 pack of your favorite hot pot soup base (Kimchi flavor is used in the photo above.)


<Optional>

Sesame oil to taste

Chopped nori seaweed to taste

Finely chopped scallions to taste

Toasted white sesame seeds to taste


*Everything except the bell peppers and chives are usually available at Maido!


Directions:

1. Thinly slice the cabbage and cut the grape tomatoes into half. Thinly slice the yellow bell pepper and cut the chives into 2"/5-cm lengths. Remove the stems from the shimeji mushrooms and separate them into small clusters.


2. Boil the somen noodles in plenty of water (not included in the ingredients list), rinse thoroughly under cold water, drain well, and arrange in a serving bowl.


3. Shake the pot broth well before pouring it into a pot and placing it over heat. Once it comes to a boil, add the ground pork, the ingredients from step 1, and the bean sprouts, and cook until the ingredients are heated through.


4. Ladle the mixture from step 3 into the serving bowls. Add sesame oil, chopped nori seaweed, scallions, toasted white sesame seeds, and/or other toppings as desired, and serve the somen noodles with the broth.


Tip:

  • By changing the type of broth, protein, vegetables, or noodles you use, you can try out a wide variety of dishes that taste completely different.

  • If you use regular tomatoes, you can use about 3 of them and cut them into 8 wedges.
