This dish can be easily prepared in a large frying pan or pot. Chan-Chan Yaki is a dish of steamed salmon and seasonal vegetables seasoned with miso. It is a local dish of Hokkaido.
Ingredients (3-4 servings):
1-2 fillets of salmon
Cabbage as much as you like
Onion as much as you like
Bunashimeji beech mushrooms as much as you like
Carrot As much as you like
Other vegetables as much as you like
<Sauce>
4 tbsp of miso
2 tbsp of mirin sweet cooking rice wine
2 tbsp of sugar
1.5 tsp of ginger tube/paste
Frozen Salmon Fillet
Directions:
1. Cut vegetables into appropriate size. If they are too large, they will not cook well.
2. Make miso sauce with the sauce ingredients.
3. Cook the salmon in a frying pan. After a while, add the vegetables. Cover it with a lid to steam.
4. Cook on medium-low heat for about 10-15 minutes. Remove the lid and when the vegetables get soft, pour the sauce made in step 2 over them, cover with a lid again and cook for about 3 minutes more.
5. Take the pan to the dining table, stir and enjoy.
Tips:
If you have leftover, fry it in a frying pan with sesame oil to remove the moisture, then mix it with rice to make fried rice.
Be careful with the bones, if any.
The sweetness of the sauce can be adjusted to your own taste.
If you use a frying pan that tends to stick, add a little oil before cooking the salmon.
