(Recipe) Curry Mayo Flavored Kabocha Squash & Edamame Salad


Here is a recipe using edamame and mayonnaise from the sale items. All the items can be purchased at out store. Kabocha squash and edamame salad seasoned with curry powder and mayonnaise has a unique flavor you will not be able to find in restaurants, even in Japan. Kabocha squash can be replaced by satsumaimo sweet potatoes or regular potatoes to your liking.

Ingredients (2 Servings):

3.5 oz./100 g of kabocha squash

1 tsp of curry powder

1.8 oz./50 g of boiled edamame

1 tbsp of mayonnaise

A pinch of salt and pepper

Directions:

1. Dice kabocha and microwave at 1000w for 1 minute 15 seconds. Remove the edamame from the bunches.


2. When cooled, combine the kabocha and edamame.


3. Season with salt and pepper and add mayonnaise and curry powder. Refrigerate.


4. Once cooled, the dish is ready to serve!
