Also available in a plain, unseasoned version, called tarako, mentaiko are marinated with powdered chilies and spices to give them a unique and piquant flavor. Tightly packed and encased in a natural membrane, these fish eggs are delicious both eaten plain with rice, and cooked as a component in pasta sauces or onigiri fillings.
