(Recipe) Simmered Mitsuba with Egg


This simple dish is a great way to enjoy the flavor of mitsuba to the fullest! The fragrant mitsuba leaves have a great presence, so you can create an elegant and authentic tasting Japanese side dish with some condiments. It is also a great way to use leftover mitsuba leaves.


Ingredients (2 servings):

1 bunch of mitsuba leaves

2 eggs

*5 fl. oz./150 cc of water

*2/3 tsp of granulated dashi soup stock

*2 tsp of soy sauce

*2 tsp of mirin sweet cooking sake

*1 pinch of salt

Green onions to your linking


Directions:

1. Cut the mitsuba into 1.5"/4 cm pieces.


2. Heat up all the ingredients starting with a "*" in a small saucepan over medium heat.

4. When it brings to boil, add mitsuba and cook for 15 seconds.

Tip:

Do not overcook the mitsuba.
