Ajipon


Take a look at one of our staples-- a classic seasoning sauce called Ajipon, or ponzu. First created by the mirin company Mitsukan about 40 years ago, ponzu sauce is made by simmering mirin, rice vinegar, bonito flakes, and kombu seaweed together and then adding a splash of juice from a citrus fruit-- most often yuzu, sudachi, daidai, kabosu, or lemon. The result is a relatively thin sauce with a consistency similar to soy sauce, but with a flavor that is delightfully complex. Salty, savory, a touch sour, and even sometimes slightly bitter, ponzu is great for dipping, marinades, soup broths and more! Once it finds its way into your pantry, you’ll wonder how you ever managed to cook without it.
