Shimesaba Cured Mackerel Sushi Roll / Sabazushi

You like sushi, but you're not a big fan of raw fish? Or you're interested in some unique sushi? We got you! We offer the frozen shimesaba (cured mackerel) at the store, so you can make this professional looking sushi with amazing flavor very easily at home! Shimesaba Cured Mackerel Sushi Roll Serves: 2 (2 sushi rolls) Prep time: 5 minutes if the rice is already cooked Cook time: 10 minutes Total: 15 minutes Ingredients: 2 bowls of rice Sushi vinegar - 8-10% of the cooked rice weight 2 fillets of shimesaba/cured mackerel - defrosted 4 ohba leaves Sushi ginger to your liking Soy sauce to your liking How to prepare sushi rice with sushi vinegar: While the rice is hot, pour the sushi vinegar over the rice and mix them. You add roughly 8-10% of the cooked rice weight in sushi vinegar. Tips: We grilled the cured fish because grilling (or searing) removes moisture from the fish and concentrates its umami flavor. If you prefer not to do it, you can also enjoy the cured fish without grilling it (You can eat it just by defrosting it). Instructions:

  • Prepare sushi rice.

  • Grill the the cured mackerel until the color of the meat changes and the skin gets a bit burned.

  • Put a plastic wrap (you'll need to wrap the whole sushi with it, so make it big) over a cutting board or flat plate, place the mackerel facing the skin side on the bottom. *You make two of them (two rolls) with two fillets.

  • Place ohba leaves over the mackerel. (You can cut the ohba leaves into some pieces, or just place the whole leaves).

  • Place picked ginger over it.

  • Put a bowl of sushi rice on each one.

  • Wrap it, and roughly make a shape of sushi roll. If you don't have a sushi mat, try to roll it as it is to make a better shape.

  • If you have a sushi mat, place it on it, then roll to make a better shape.

  • Cut it into pieces, and pour soy sauce over to your liking. (You can also add some soy sauce before you roll the sushi). Enjoy!
