Recipes Using Homemade Miso / Koji Miso
In the last blog post, we introduced how to make homemade miso. Today, we'll introduce some recipes using it, or koji miso, the most similar kind of miso to the homemade miso that we introduced! You can get koji miso at Maido. The recommendation is at the end of this newsletter.
Tofu Miso Dengaku

Miso dengaku is a miso glazed dish, and popular ingredients for it include tofu, eggplant, daikon radish, and konnyaku. Most of the ingredients are all vegetarian/vegan. You can replace tofu with something else as well!
Ingredients (2 Servings)
1/2 pack (5.3 oz / 150 g) of firm tofu
*1 tbsp of homemade miso or koji miso
*1 tbsp of sugar
*1/2 tbsp of mirin (sweet cooking sake)
*1/2 tablespoon of water
*1/2 egg yolk
Oil as needed
Your favorite garnish
Directions
Step 1. Wrap tofu in kitchen paper and place a weight on top to drain. Cut the thickness in half and cut into bite-size pieces.
Step 2. Heat oil in a frying pan, add "step 1" and sear on both sides.
Step 3. Heat all the "*" ingredients in a pan over low heat, stirring constantly, and remove from heat when the surface becomes glossy.
Step 4. Place "step 2" on a serving dish, top with "step 3" and put some garnish as you like.

Stir-fried Pork and Cabbage with Miso

After stir-frying the cabbage and pork, all you have to do is to add the special miso sauce. Since all you have to do is stir-fry, it's especially helpful when you're short on time or want to make things easier. It goes very well with rice.
Ingredients (2 Servings)
5.3 oz / 150 g of Mugifuji pork belly
5.3 oz / 150 g of cabbage (about 3 leaves)
*1 tbsp of homemade miso or koji miso
*1/2 tbsp of sugar
*1 tsp of shiro dashi
oil as needed
Directions
Step 1. Cut pork and cabbage into bite-size pieces.
Step 2. Mix all the "*" ingredients together.
Step 3. Heat oil in a frying pan and add cabbage.
Step 4. When the pork is cooked, add "step 2" and stir-fry.
