(Recipe) Stewed Kabu Turnip and Ground Pork with Starchy Sauce


The weather is gradually warming up recently, but there are still some cold days and cooler nights. So, you enjoy the seasonal turnips and ground pork in this thick starchy sauce to warm you up. It is easy to make, yet very addictive!


Ingredients (4 servings):

4 to 5 kabu turnips

5.3 oz./150 g of ground pork

1 tbsp of oil

1 tbsp of ginger (or ginger tube)

*1 tbsp of mirin sweet cooking sake

*2 tbsp of cooking sake

*1 tsp of torigara chicken soup stock

2 tbsp of katakuriko potato starch

6.8 fl. oz./200 cc of water

2 tbsp of soy sauce


Directions:

1. Peel and cut turnips into eight equal pieces and cut leaves and stems into 1.2"/ cm lengths.


2. Add the ginger to the pan with the oil and sauté over low heat until it gets fragrant.


3. Add the minced pork and saute over medium until the meat changes color.


4. Add kabu turnips and saute lightly.


5. Add the seasonings starting with a "*" and cook for 3 minutes.


6. Add soy sauce and simmer covered over low heat for 10 minutes.


7. Stir in the chopped kabu turnip leaves and cook over low heat for 5 minutes.


8. Cover the pan.


9. Pour into the katakuriko starch mixed with water, mix well and turn off the heat.


10. Serve and enjoy.


Tip:

It is important to cook with the seasoning first to soak up the flavor in step 5.
