Gyudon at Home

Have you dined at Maido? If so, gyudon must sound and look familiar to you, as it was one of our most popular dishes along with our okonomiyaki and yakisoba. It's now discontinued (it's been more than a year), but we still get asked about it almost everyday at our restaurant. Those who miss gyudon can now try cooking it at home!

Gyudon is a Japanese don bowl which has a topping of beef and onion simmered in a mildly sweet sauce flavored with dashi, soy sauce, and mirin over rice. We used to serve it with some picked ginger (just like the picture) as garnish. In Japan, they also serve it with a raw or soft poached egg, scallions, grated cheese, kimchee, and so on. It's more tender and richly delicious when made with wagyu beef.

Ingredients:
 
4 bowls of cooked rice
 
1 onion
 
2 packages of washugu beef kiriotoshi
 
3 tbsp soy sauce
 
2.5 tbsp cooking sake
 
1.5 tbsp mirin
 
2.5 tbsp sugar
 
13.5 floz. water
 
2 tsp hondashi powder
 
grated ginger / ginger tube to your liking
 

 
Optional Ingredients:
 
Your favorite garnishes such as pickled ginger, raw/porched jidori eggs, scallions, grated cheese, kimchee etc.
 

 
Directions:

  • Slice the onion into wedges.

  • Quickly blanch the beef in hot water to remove the smell. Then, drain the boiled beef in a colander. If you cook the beef without soaking it, the entire dipping sauce will smell like meat.

  • Add all seasonings (soy sauce, sake, mirin, sugar, water, dashi, and grated ginger) into the pot.

  • Place the boiled beef and onions in a pot and carefully remove any scum that comes out.

  • Once the scum is gone, turn the heat to medium and simmer for about 10 minutes, then it's done!

  • Serve over rice and top with your favorite garnish if desired.
